A party (handaan) is not a party without Pancit – the Filipino quintessential dish made of bihon (rice noodles) cooked with sautéed chicken meat, liver and vegetables in soy and oyster sauce.
INGREDIENTS:
1/2 piece dressed chicken
1/2 kilo chicken liver
250 grams bihon (rice noodles)
1 medium carrots
100 grams green beans
2 stalks celery
1/2 cup soy sauce
3 tbsp oyster sauce
black pepper
cooking oil
1 liter chicken stock/broth
TIPS: Buy whole chicken, boil with salt and black pepper. When cooked, debone and shred the chicken meat. Set aside the stock use for cooking the noodle. Follow the suggested cooking directions for the rice noodles. Normally, 1 liter of liquid is enough for 250 grams of noodles. Cooking the vegetables and rice noodles separately for more control, you can easily overcook or make the bihon soggy.
